What's "Bandaged Cheddar"?

It's the original way cheddars were made before refrigeration and plastic. The curd is pressed into a wheel with a cheesecloth wrapped around it. Once the curd is set, you shmeer the outside with lard and put it into the cheese cave to age for 12-14 months before it's sold. Once the cheese is in the cave, the spores in the cave inoculate the cheese.
