What's "Bandaged Cheddar"?

It's the original way cheddars were made before refrigeration and plastic. The curd is pressed into a wheel with a cheesecloth wrapped around it. Once the curd is set, you shmeer the outside with inoculated lard and put it into the cheese cave to age for 12-14 months before it's sold.
